These are so quick and easy to make. Perfect to whip up for guests or for lunch boxes! I don’t know why it seems to be such a niche, the savoury muffin. I made these in the flat and my flatmates had simply never heard of them before. Outrageous! Anything savoury was a scone. This is definitely not a scone. It’s soft and so delicious!
You will need:
- 250 grams of grated cheddar cheese
- 1 1/2 cups of self raising flour
- 1 tsp salt
- 1 tsp pepper
- 1 tbsp brown sugar
- 4 or 5 rashers of unsmoked bacon
- 1 egg
- 1 cup of low fat milk
Mmm Muffin Method! Preheat your fan oven to 210°C. Grease a 12 mould muffin tray.
Fry up a few rashers of bacon. Set on paper towels to cool.
In a large mixing bowl combine cheese, flour, sugar, salt and pepper. Cut up bacon and stir through.
In a smaller bowl mix egg and milk.
Make a well in the centre of your dry ingredients and pour in the wet mixture. Fold together slowly being careful not to over mix.
Transfer batter into moulds and bake for 10 to 15 minutes or until golden.
Serve warm and spread with butter.
Note: A plain savoury muffin is very diverse. Another shell of a recipe to interpret and to add and subtract from as you like. This recipe is also great with peppers (Capsicum) and herbs.
